Andhra Style Gongura Chicken

500g Chicken
Onion (2)
Tomato (1)
Green Chillies (4)
Ginger, Garlic (6 cloves)
Garam Masala powder
Turmeric powder
Cooking oil
Methi seeds (1/4 tbsp)
Coriander seeds (1 tbsp)
dried red chillies (4)
fennel seeds (1tbsp)

Method
In a small pan, dry roast Methi seeds (1/4 tbsp), Coriander seeds (1 tbsp), dried red chillies (4), fennel seeds (1tbsp) for 3-4 minutes on medium heat
Blend these seeds once they have cooled down into a fine powder
Heat oil in a pressure cooker over medium heat
Add chopped onions, ginger, garlic and green chillies and saute until they are lightly brown
Add tomatoes and saute until they are soft and mushy
Once done, add the chicken, garam masala and turmeric powder
Add ¼ cup of water and pressure cook chicken for 3 to 4 whistles and turn off the heat
Wash and chop the gongura leaves and keep aside
In a pan, add some oil along with garlic and saute the chopped gongura leaves along with a little salt and garam masala
Saute for 3-4 minutes until they become a mushy paste
Add the paste into the cooked chicken and saute on high heat for 2 minutes
Garnish with coriander leaves
Check the salt and spices and adjust according to taste
Serve the curry hot with some ghee rice!
