Cheesy Roasted Ratatouille Dip

When Remy whipped up that ‘perfect’ ratatouille for the food critic in the movie Ratatouille, we all wanted to get a bite of that! You just cannot go wrong with this one.

    Ingredients: Others

    Green beans

    Onion

    Button Mushrooms

    Broccoli Florets

    Olive oil

    Salt

    Black pepper

    Oregano

    Unsalted butter

    Parmesan cheese

    Monterey jack cheese.

    Method

    Preheat oven to 205 degrees C

    Line 2 large rimmed baking sheets with parchment paper

    Cut all the veggies in uniform bite sized pieces Place the veggies in a single layer

    Brush all pieces with olive oil and sprinkle salt oregano and pepper

    Roast in the preheated oven for 15 minutes

    Melt unsalted butter in an ovenproof skillet or baking dish

    Add the roasted veggies along with Monterey Jack cheese and Parmesan Cheese

    Stir to combine

    Place the skillet in the oven

    Bake for 15 minutes until the cheese is fully melted

    Serve immediately with naan or bread
