Cucumber and Green Grape Gazpacho

Gazpacho is a chilled summer soup originally from Andalusia. Nice creamy soup topped with a spicy tomato salsa is a nice addition to a summer lunch.

    Ingredients: Others

    White seedless grapes

    Garlic

    salt

    white balsamic vinegar

    Bread

    almonds

    Fresh Dill

    Olive oil

    Black pepper

    Red onion

    Jalapeno pepper.

    Method

    For Gazpacho: In a large bowl, compile English cucumber( 1), white grapes (1

    5 cups) and garlic ( 1 clove)

    Add salt and white balsamic vinegar (¼ cup)

    Toss to coat and set aside to marinate for 20 minutes

    In a small cup, pour water over 2 slices of torn bread and let it sit for 10 minutes

    Add toasted almonds to a food processor and pulse until finely minced

    Add the cucumber mixture, soaked bread, fresh dill (1/4 cup), Olive oil (2tbsp), Yogurt (1/3 cup) and black pepper into the processor

    Puree until smooth

    Season with salt and pepper if required

    Chill until ready to serve

    For Salsa: Combine cherry tomatoes, red onion, jalapeno peppers, salt, olive oil and white balsamic vinegar

    Taste and adjust seasoning as needed

    To serve, pour the soup into bowls and a tablespoon of salsa just before serving
