A simple and delicious four ingredient recipe making for a perfect light lunch.
Ingredients: Others
Mushroom
Carrots
Cauliflower Florets
Onion
Garlic
Chilli powder
Cumin powder
Sea salt
Chipotle seasoning
Avocado, lemon.
Method
Prep all the vegetables into very small chunks
You could also lightly blend them so that they are grounded but still maintain some texture
Add oil in a pan and saute these veggies
Add Chilli powder, Cumin powder and chipotle seasoning
Saunte until the cauliflower and carrots are slightly crispy
Once cooled, add this mixture in a lettuce wrap and top it up with fresh coriander and a dash of lemon
Enjoy!
