Queso filled Snacky peppers

    Ingredients: Others

    Olive oil

    salt

    Shredded cheese

    evaporated milk

    cream cheese

    jalapeno pepper

    black pepper

    Method

    Preheat broiler oh High with oven rack 5 inches above from heat

    Toss the olive oil with salt and arrange them in a single sheet on a baking sheet

    Broil for 5-7 minutes

    Reduce the oven temperature to 220 degrees C

    Flip over the bell peppers so that the charred side is on the bottom

    Cut the peppers lengthwise and remove the seeds

    Whisk together shredded cheese (2 cups) and evaporated milk (1/2 cup) in a double boiler

    Whisk until smooth for 3-4 minutes

    Remove from heat

    Stir in cream cheese (4 tbsp) and picked jalapeno pepper

    Spoon the cheese mixture into each pepper

    Do not overfill

    Bake until the tops golden for 10-12 minutes

    Sprinkle jalapeno pepper chunks and fresh cilantro and its ready to eat!
