Vietnamese vegetable spring rolls

This veggie-packed Vietnamese Spring rolls with a roasted coconut almond dipping sauce is sure to add a healthy twist to your lunch.

    Ingredients: Others

    Carrots

    Avocado

    Raw Mango

    Jalapeno pepper and Rice paper.

    For sauce: Roasted almonds

    coconut milk

    soy sauce

    lime juice

    honey and garlic.

    Method

    Combine Roasted almonds (1/2 cup), coconut milk(1/2 cup), soy sauce(1tbsp), lime juice(1tbsp), honey(1 tbsp) and garlic( 3 cloves) in a blender until smooth

    Set aside Fill a shallow container with warm water

    Gently place a rice paper wrapper in the water for about 15 seconds, until they turn soft and pliable

    Stack diced veggies and herbs on the rice paper and gently roll

    Serve with almond butter dipping sauce!
