Cucumber Burrito Boats

Are you still snacking on plain old cucumbers? Where’s the fun in that? Make this fun and healthy burrito boats which will easily become your kid’s favorite snack!

    corn kernals

    canned beans

    Cheese

    Method

    Preheat oven to 200 degrees C Slice the Cucumber in half lengthwise

    Remove the softer inside of the cucumber using a spoon

    ( Don’t throw them away, they can be added to a smoothie or a detox juice) Place the pan over medium heat and pour about 1 tbsp of olive oil

    Add onions (3tbsp), diced green bell peppers (3tbsp), Cherry Tomatoes (3tbsp), corn kernals (3tbsp), canned beans or your leftover rajma curry (3tbsp)

    Stir well and season with a pinch of garlic powder, cumin, garam masala and salt

    Add Fresh Cilantro (3tbsp) as well

    Fill the cucumber with this mixture and sprinkle a generous amount of grated cheese

    Place them on a baking tray and cover with tinfoil

    Bake in preheated oven for 20 mins

    Then remove the tinfoil and bake again for 5 minutes until the cheese has melted

    Remove from the oven and enjoy!
