Quinoa salad with mango, peas, ginger and lime

This vibrant salad is packed with protein and astonishing summer flavors.

    Ingredients: Others

    Red Quinoa

    Snap peas

    roasted Cashew nuts

    Mango

    Chilli

    Fresh Ginger

    Salt

    Pepper

    Olive Oil

    Lime Juice

    Method

    Bring a pot to boil and pour in a cup of Quinoa and simmer for 9 minutes

    Once done boiling, run it under cold water and set aside to dry

    Prepare and chop your other ingredients

    Place the quinoa into a bowl

    Season with salt and pepper

    Add all the leafy greens and vegetables along with grated ginger and lime juice, except mango

    Let the salad marinate in the fridge for an hour

    Add in the mango just before serving
